Hey Pennsylvania, have you signed up for our Free Power Day program yet? You remember we want to give you free power, for one day, every week, for an entire year, right?
Last month, we introduced you to our Harrisburg, Pennsylvania customer, Colleen Wassell, who manages a family of five, plus their golden retriever, Romo. Colleen showed us a few things she likes to do during her Free Power Days, including household chores, laundry and bathing Romo.
Another way Colleen uses her Free Power Days is to cook her family meals for the week. Not only does this help with her energy bill, but it also allows her to spend more time with her family at night because she’s not busy worrying about dinner.
If you’re a tetrazzini fan, below is Colleen’s recipe. We’ll bring the bread!
- 1⁄4 cup butter
- 1⁄4 cup flour
- 1⁄2 tsp. salt
- 1⁄4 tsp. pepper
- 1 cup chicken broth (fat free and low sodium)
- 1 cup whipping cream
- 2 tbs. sherry
- 1 pkg. (7 oz.) spaghetti
- 2 cups cubed cooked chicken breasts
- 1 can sliced mushrooms
- 3⁄4 cup grated Parmesan Cheese
- 1⁄4 cup shredded Mozzarella Cheese
Heat oven to 350 degrees (convection bake). Cook spaghetti according to package directions. Melt butter in a large sauce pan on medium heat. Blend in flour and seasonings, stirring frequently until mixture is smooth and bubbly. Stir in chicken broth and cream, stirring constantly. Bring to a boil and cook for one minute. Remove from heat and stir in sherry, spaghetti, mushrooms, and chicken plus 1⁄4 cup of Parmesan Cheese and 1⁄4 cup of Mozzarella Cheese. Mix thoroughly!
Spray a 2 qt. casserole dish with Pam. Pour the spaghetti mixture into the casserole dish and spread out evenly.
Sprinkle the remaining Parmesan Cheese over the top. Bake uncovered for 35 minutes or until the top is lightly browned and bubbly.
