Get ready for a sweet, salty, and delicious holiday-themed snack mix with this recipe for kettle corn covered in decadent melted white chocolate. This delicious dish makes the perfect no-cooking-needed holiday treat that’s perfect for your family or your holiday parties.

The perfect snack mix for your party planning AND gift-giving needs this holiday season.

Instead of popping kernels on your stove, take the energy-saving step of purchasing microwavable bags of kettle corn. Or you could just buy a big bag of already-popped kettle corn from the grocery store. Both options are likely found on the snacks and chips aisle of your local grocery store, so compare the prices to determine which will be a better option for you.

The only “real” energy required for this ridiculously easy treat is the microwave to melt the white chocolate bars. I prefer to buy two of the four-ounce Baker’s white chocolate bars because they melt perfectly in the microwave and whisk to perfection. It only takes seventy to eighty seconds in the microwave to have the white chocolate ready to drizzle over the other ingredients.

This recipe starts with a combination of sweet kettle corn, pretzel bits, chocolate candies, chocolate crisped rice cereal, and roasted almonds with sea salt. The sweet and salty combination is the perfect base for a snack attack.

While I typically switch between chocolate and peppermint candies, I sometimes sprinkle crushed peppermint bark bits top. And if I’m feeling extra fancy, I drizzle melted milk chocolate over the top of the white chocolate in the regular recipe.

Or just eat a bowl of it yourself.

The best thing about this recipe is it does not need to be stored in the refrigerator.  You can place it in the holiday tins and break chunks out to eat it, form little clusters of the mix before the white chocolate hardens and have little snack bites, or even form this mix into balls on sticks.

One key preparation tip: Mix in the non-chocolate candy ingredients you choose with the melted white chocolate BEFORE mixing in the chocolate candy ingredients. This will prevent the candy mixed in from melting.

White Chocolate Christmas Kettle Corn Mix

Ingredients:

I could eat these salty components on their own.
  • 5 c. Kettle corn (popped from bag or pre-popped)
  • 1 c. Chocolate crisped rice cereal
  • 1 c. Pretzel bits (with salt)
  • 1 c. Roasted almonds coated in sea salt
  • 8 oz. White chocolate bar (or two 4 oz. bars)
  • 8 oz. Chocolate peppermint candies
  • Red and green small round sprinkles for topping
  • Peppermint bark bits for topping (optional)
  • Melted milk chocolate (optional for topping drizzle)

Directions:

Mmmm…. Popcorn….

1) Measure out the popped kettle corn. [Pop bag in microwave as directed on bag’s instructions.]  Add to large mixing bowl.

2) Measure out the pretzel bits (crush up larger pretzel pieces if needed), chocolate crisped rice cereal, and roasted almonds. Add these ingredients to the large mixing bowl holding the kettle corn.

The real key to making this recipe work for you – make sure your white chocolate is totally melted and whisked smooth.

3) Unwrap white chocolate bars and break into pieces. Place in microwave safe bowl. Microwave for 70 to 80 seconds in 20-second intervals. Stir between each microwave stage to help the chocolate melt evenly.

Nothing could improve this salty-sweet combination except …

4) Pour melted white chocolate over the ingredients in the large mixing bowl.  Mix together with a spatula.

… adding even more chocolate! Especially the minty variety!

5) Once chocolate has coated the snack mix, it should be cool enough to add in candy pieces. Add candy bits into the large mixing bowl and mix again with spatula.

Even if you give away most of this snack mix, do try to save some for yourself.

6) Serve mix into preferred vessel: holiday tins for gifting, loose in a bowl, or form into balls. Top with red and green sprinkles and/or crushed peppermint bark bits.

When the white chocolate coating hardens, this really is the most delicious snack ever! Make sure you have the napkins ready!
