Meatless Monday: Halloween Party Beer Cheese Dip
Get spooky this Halloween with an excellent cheese dip.

Skip the meat in the appetizer at your Halloween party with today’s delicious recipe. This Meatless Monday features delicious spread of themed party foods, and it stars a quick and easy fall beer cheese dip and some of my favorite seasoned roasted vegetables. We’ll also discuss additional creative party food items and a few extra tricks that will make your guests scream with joy!

For Halloween party beer cheese dip, I recommend using an Oktoberfest or seasonal fall beer from your favorite local craft brewery, as it gives the dip a “themed” feel versus a regular beer cheese dip. The roasted vegetables are then given a little zing with lemon pepper, sea salt, and garlic, which pairs perfectly with the garlic powder and Cajun seasoning in the beer cheese dip.

Add some spice to your Halloween party by going over-the-top with naming your veggies.

Get creative by giving spooky names to the various parts of your appetizer, and add a few extra personal touches to your decorations. For example, call the roasted cauliflower “Ghost Trees.” Name the roasted asparagus spears “Zombie Fingers” or “Ghoul Fingers.” Skewer cherry tomatoes on toothpicks and call them “Devil Bombs.” You can even make a little sign that says “Vampires beware – there’s garlic in there!” for your dip.

C’mon – it’s Halloween! Go big, or go home!

Another great food to dip in cheese dip is fresh baked bread.  Cut the bread into Halloween themed coffin shapes perfect for your vampire friends staying away from the dip (you know, because of the garlic).  You can even pull out those old Halloween cookie cutters for a guide to cut your bread!

You can even make stand up cards, signs, or just a big hand written chalkboard to “name” the ingredients/foods you are serving and give them creative titles. There are so many fun options! Because no matter what dippers and sides you serve, with a little creative thinking for the names, your Halloween party will only get better.

Let’s get cooking!

A proper cheese dip goes WAY beyond just melting cheese. It’s an involved process requiring attention to detail.

1) Heat nonstick skillet or cast iron skillet over medium heat. Melt butter in pan and add flour to melted butter.

Mmmmm…. Cheesy goodness….

2) Whisk continuously making sure to not let any areas sit too long without whisking them up (to prevent burning), and the roux will form in a couple of minutes. Once the color gets to a medium golden brown color, pour in the 12 oz. of beer.

3) Keep whisking and pour in the half and half (or milk).

4) Turn the heat level to low. Add the softened cream cheese, shredded cheeses, and seasonings. Whisk all together.

5) Serve with roasted vegetables, pretzel rods, cherry tomatoes, fresh bread, or any other delicious dippers.

Seriously – don’t put that plastic cauldron in the microwave. Take care of those decoration!

6) If serving in “witch’s cauldron,” make sure to keep the dip in a clear bowl that will fit/hide inside so if the dip needs to be reheated during the party, it can be done. Don’t microwave the plastic one from the party store.
